A delicate cooking method for a cut of meat that has always been widely used in our homes, and we have now brought it to the forefront to highlight its grace and properties. We’re talking about pink cooking, a technique that requires meticulous timing and reaching a precise temperature of the meat. It is then allowed to rest adequately to ensure it reaches the desired texture, and the juices distribute evenly.

A triumph of lightness, elegance, and sophistication for a healthy first course that combines the benefits of chickpeas with the purity of our selection of leaves collected from typically oriental plants, cultivated in the resort’s garden in respect of tradition.

Chickpeas: properties and benefits.

The desire to include chickpeas on the menu, as with all our preparations, comes from the idea of offering resort customers well-balanced and nutrient-rich dishes for the body.
