A triumph of lightness, elegance, and sophistication for a healthy first course that combines the benefits of chickpeas with the purity of our selection of leaves collected from typically oriental plants, cultivated in the resort’s garden in respect of tradition.

With a refined appearance and careful plating, the creamy chickpea presents itself as a perfect ensemble in which rice and legumes blend into a soft and velvety consistency, a true delight for the palate. The dish is garnished with a mix of oriental leaves personally selected by the Chef, capable of enhancing the delicate taste of chickpeas and contributing to enrich the chromatic range with shades that recall the essence of nature and the most genuine agricultural heritage, which has always been the focus of our attention.
The creamy chickpea pairs well with a good glass of wine, which our sommelier Marco Pelizzari will be able to suggest based on the seasonality and availability of his cellar (“il pozzo di Marco”, ed.), constantly renewed.

The desire to include chickpeas on the menu, as with all our preparations, comes from the idea of offering resort customers well-balanced and nutrient-rich dishes for the body. Because in addition to the positive tasting experience, we strongly believe in the gesture of getting up from the table and feeling good, refreshed, both physically and mentally.
Starting from this concept, the choice related to the new proposal on the menu has focused on chickpeas, legumes that stand out for a wide range of benefits for bones, intestines, heart, eyes, and are very suitable for dietary regimes aimed at controlling body weight.
Among the beneficial properties of chickpeas, we highlight:
- They protect bones and teeth thanks to the presence of iron, calcium, magnesium, phosphorus, and zinc
